I love to bake and cookies are always good. Like many other things, it’s nice to put some up for later when you are mixing up a batch. For a lot of cookies, I just bake the whole batch and freeze some of them. For chocolate chip cookies, I like to freeze the dough and bake a few at a time so they are hot and fresh when it’s time to eat.

Chocolate Chip Cookies

  • 1 cup shortening
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 1/2 cups chocolate cookies

Cream together the shortening and sugars. Add vanilla and eggs, mix well. Stir in dry ingredients. Stir in the chocolate chips.

Drop by rounded teaspoon onto cookie sheet. Bake at 350 degrees for 12-13 minutes, until golden brown.

I don’t keep brown sugar around. I mix 1 cup + 2 tbsp white sugar with 3 tablespoons molasses to get one cup of brown sugar.

Freezing the dough

Dough can be kept in the fridge for about a week. It needs to be kept tightly covered so that it doesn’t get dry. It can be kept in the freezer for about 3 months.

There are a couple of different ways to freeze the dough. It can be rolled into a roll about 1 1/2 inches in diameter. Wrap it tightly in waxed paper and then freeze. It will need to be thawed enough to cut into slices about 1/2 inch thick.

Use a scoop to get even balls

Another option for freezing is to make dough balls and freeze them. I like to use a scoop so that I have even sized balls. This helps them to bake evenly.

I scoop them onto a cookie sheet lined with waxed paper. I then put the entire tray in the freezer, usually overnight.

If there are more will fit on one tray, I just put another layer of waxed paper on top and add more dough. Once the dough is frozen, I then put a few balls in small bags. I can then bring up some to bake.

When you bake frozen or refrigerated dough, it takes a little longer. From frozen, I bake the cookies for 15 minutes.
