As I’ve mentioned in a few other posts, such as this one and this one, I like to have things prepared in the freezer for easy dinners. Sometimes, dinner comes from the freezer, but in a different way.
This pot of soup was made mostly with leftovers from the freezer. When we have just a couple of spoonfuls of a vegetable or rice left, I toss it in a bag or container in the freezer. Small amounts of various meats may make there way into the mix as well. After I while, I pull out the odds and ends and make soup.

For this batch, I didn’t have any leftover meat to go in, so I fried up a half pound of chorizo sausage. I chopped up a small onion, and added a can of diced tomatoes to the meat and leftover veggies. I added a couple of cups of turkey broth from cooking the carcass last Thanksgiving and about 10 cups of water.
After about 15 minutes for everything to get warm, I added the rice and potatoes and let it simmer for about 10 more minutes. And dinner was ready. This was a fairly spicy batch of chorizo, so I ended up dropping a little sour cream in to cool the zip down a bit.
This sort of soup can be made with whatever you have – leftover cabbage or kale, ham or rotisserie chicken, potatoes, rice and so on. It’s an easy way to use up leftovers and only takes a few minutes to make.
