A light cake for two – orange cake with glaze

I do a lot of batch cooking and freeze items for later. Sometimes it is nice to do a smaller recipe, especially for desserts. We don’t want to be eating a cake for two weeks! Here’s a quick orange cake treat for two.

Orange cake with orange glaze and dark chocolate shavings

The recipe came from the All Recipes website (no affiliation). It is actually for lemon cake, but I had an orange at home, so I switched out the lemon for orange. The recipe is called Simple Lemon Cake and you can find it here.

I substituted orange juice and orange zest for the lemon in the recipe. I also added a half teaspoon of orange oil to the batter to give it a bit more flavor. It made a lovely, light cake. I talk more about zesting and juicing citrus fruit in this post about making orange rolls.

To top the cake, I mixed up a glaze with about 1 1/2 cups powdered sugar, 1 tablespoon orange zest, a 1/4 teaspoon orange oil and enough orange juice to make a thin glaze. I used a bamboo skewer to poke a bunch of holes in the top of the cake.

Pour the glaze over the top of the cake. It works best if the cake is just warm so that it spreads over the whole surface.

I chopped up some dark chocolate to sprinkle on top after the cake was completely cool. I may have to try adding some cocoa powder to the glaze next time to see how that works.

The cake is done and ready to serve.

It might be a little prettier if I had done chocolate curls, but it was very tasty.
